Sacred to the ancient Romans, sage is a slightly bitter , warming, and intensely fragrant herb, essential for flavoring meats , soups , omelets , breads , stuffings , and cheese dishes. Its velvety, evergreen, gray-green leaves are excellent fresh or dried. The plants also produce beautiful blue to violet-blue flowers , much appreciated by bees. Vigorous, it can reach 60 cm in height and spread just as much. Older plants become woody: light pruning encourages new, more tender and flavorful growth.

Harvest the leaves as needed, preferably in the morning for maximum flavor. In cold climates, provide winter protection .
