Planting and cultivation of horseradish

When and where to plant
Plant in early spring, as soon as the ground is workable.
Choose a location in full sun , with well-drained and fertile soil.
Warning : Horseradish can become invasive; consider limiting its spread by planting the roots in a large container or surrounding them with an underground barrier.

How to plant
1. Dig a hole approximately 15 cm (6") deep .
2Place the root at a 45° angle, with the top end about 5 cm below the soil surface.
3Cover with loose soil and water thoroughly.
4Space each plant 60 cm (24") apart , as the foliage becomes voluminous.

Interview
Water regularly to keep the soil cool, but avoid overwatering.
Mulch around the plants to limit weeds and retain moisture.
Cut the flower stalks as soon as they appear to prevent the plant from spreading too quickly.
Horseradish is a vigorous plant, so it can be divided every 3 to 4 years to prevent it from taking up too much space.


Harvesting and preserving horseradish

First harvest : From the second year onwards, to allow the roots to develop properly.
Harvesting method : Dig up the roots in late summer or autumn, after the first frosts which soften their taste.
Storage :
In the refrigerator : Fresh roots can be kept for several weeks in a perforated bag.
To freeze : Grate the horseradish and freeze it in a small airtight container.
In lacto-fermentation : Horseradish can be preserved in vinegar, perfect for extended use.


Easy recipe for horseradish remoulade

A tangy sauce perfect to accompany seafood, meats and vegetables!

Ingredients

  • 2 tablespoons of freshly grated horseradish
  • 3 tablespoons of mayonnaise
  • 1 tablespoon of Dijon mustard
  • 1 tablespoon of lemon juice
  • 1 tbsp chopped capers (optional)
  • Salt and pepper to taste

Preparation

1. Mix all the ingredients in a bowl.
2Adjust the seasoning to taste (add more horseradish for a more intense flavor).
3Let it rest in the refrigerator for at least 30 minutes before serving, so that the flavors can develop.

Serve this remoulade with fish, cold meats or grilled vegetables!
