Also known as edible chrysanthemum , Shungiku is an ancient Japanese leafy vegetable, prized for its broad, serrated leaves , juicy texture, and unique aromatic flavor, slightly herbaceous and floral. Vigorous, fast-growing, and perfect for cooler climates , it is harvested young for delicate salads or fragrant stir-fries. In summer, it can also produce pretty, daisy-like flowers, adding charm and edibility to the garden.

Planting and maintenance:
Sow in full sun in well-drained soil, in successive batches every two weeks from April to the end of May, and again from early September to early October. Sow 1.25 cm deep and 2.5 cm apart, with 45 cm between rows. Water regularly to keep the soil evenly moist . Thin to 10 cm apart once the seedlings are established. In hot summers, provide partial shade to prevent bolting. Harvest leaves and young stems when they are 10–15 cm long for tender texture and optimal flavor.
