Sorrel is a perennial plant with a tangy , lemony, and refreshing flavor, highly prized in salads , soups , purées , omelets , sauces, and spring dishes. Its tender, aromatic green leaves return year after year, even in cooler climates. Hardy, productive, and easy to grow, it establishes itself permanently in the vegetable garden, where it provides flavorful young leaves from spring to autumn.

Planting and maintenance:
Sow in full sun or partial shade in cool, rich, well-drained soil. Sow very lightly (cover very lightly), then thin to 20–30 cm (8–12 inches ). Water regularly, especially in summer, to keep the leaves tender. Harvest young leaves for a milder flavor. Cut back flower stalks to prolong production. Sorrel can produce for several years and requires very little maintenance.
