Cultivation method:

Sow seeds directly into the ground as soon as the soil has warmed up, at a depth of 1.5 to 2 cm. Space the plants 10 to 15 cm apart in the row, with rows spaced 30 to 45 cm apart. Prefer a loose, well-drained soil, rich in organic matter and slightly alkaline for optimal growth.

Water regularly, but sparingly, to prevent roots from becoming woody. Thin plants when they are 5 cm tall to encourage root development. Harvest when roots reach full size, while maintaining their tender texture.

The roots can be eaten raw in salads, pickled, or cooked, and their red and white zoning adds a unique visual touch to dishes. The young leaves are also edible and can be used like spinach in stir-fries or salads.
