'Speckled Butterhead' lettuce is an old European variety, introduced to North America in 1799 , prized for its tender green leaves speckled with brown spots , which are as decorative as they are delicious. It forms a loose head, 15 to 18 cm ( 6 to 7 inches) across, composed of juicy, sweet, and flavorful leaves, typical of Butterhead -type head lettuces. Selected for its slow bolting and good performance in cooler climates , it is featured on the Slow Food USA Ark of Taste , highlighting its heritage and culinary importance.

Farming method
Sow directly outdoors as soon as the soil is workable , or start indoors 3 to 4 weeks before planting out. Sow the seeds 6–12 mm deep. Germination occurs in 7 to 10 days at temperatures between 12 and 21°C , with an optimum of 16–18°C . Like all lettuces, it germinates poorly above 25°C . Provide partial sun/semi-shade (level 2) and regular but moderate watering (level 2). Space plants 15 cm apart, with 30 to 45 cm between rows depending on the bed.
Harvesting and preservation
Harvest at any stage—young leaf, formed heart, or full bud—as the flavor is optimal after a few cool nights . For extended storage, keep the buds in sand in a root cellar at 1–2°C .
