'Mustard' mustard is a heritage variety from the Southern United States, prized for its pungent flavor , strong aroma , and rapid growth, even in northern climates. Its tender green leaves are excellent steamed , sautéed, in soups, or tossed into salads for a spicy kick. Easy to grow and rich in calcium and iron , it provides successive harvests throughout the cool season and is well-suited to both beginner and intensive vegetable gardens.

Farming method
Sow directly outdoors as soon as the soil is workable . Soak the seeds for up to 12 hours in lukewarm water to improve germination. Sow at a depth of 1.25–2.5 cm . Provide partial sun/partial shade (level 2) and moderate watering (level 2). Space plants 5–10 cm apart, with 30–60 cm between rows. Germination occurs in 5–10 days at temperatures between 2–23°C (optimum 15–21°C).
Harvesting and preservation
Harvest when the leaves reach about 7 cm , cutting 2.5 cm from the ground. The plant will regrow for several harvests. Store in sand in a root cellar at 1–2 °C to prolong freshness.
