'Common Italian' oregano is a perennial Mediterranean herb prized for its robust , pungent , and intensely aromatic flavor, essential in tomato sauces, grilled meats, pizzas, and classic Italian dishes. Its fragrant leaves can be used fresh or dried, while its pink to purple flowers strongly attract pollinators. Hardy, sun-loving, and possessing a deep fragrance, it self-seeds readily, forming dense clumps that faithfully return year after year. It is a versatile heirloom herb, valuable both in the kitchen and in the garden.

Farming method

Stratify the seeds for 1 to 2 weeks before sowing. Sow on the surface , without covering, as germination requires light . Start in seed trays 8 to 10 weeks before the last frost, at a temperature of 18–21°C (optimum 21°C). Transplant to full sun (level 3) with minimal watering (level 1). Space plants 30–45 cm apart, with 30–45 cm between rows. Oregano prefers well-drained, poor soil to develop a more concentrated aroma.


Harvesting and preservation

Harvest the young shoots for a more tender flavor. Cut the entire plant back to 5 cm from the ground when it flowers : it will regrow 3 to 5 times during the season. Store fresh leaves in the refrigerator for up to 3 days , or dry them for longer use.
