The 'Pepperoncini' pepper, originating from Italy and Greece, produces small, 2- to 3-inch fruits with thin, wrinkled skin that are pale yellow-green , turning red when ripe. Their flavor is mild , subtly sweet , with a variable but generally low touch of heat, making them enjoyable fresh, stuffed, sautéed, or, traditionally, pickled . Their delicate texture absorbs seasonings particularly well, which explains their popularity in preserves and antipasti. This heirloom, open-pollinated variety produces consistently on vigorous plants that thrive in hot, long summers.

Farming method
Sow indoors 6 to 8 weeks before planting time, about 1 cm deep in warm potting mix. Maintain a temperature of 25–32°C , ideally 27–31°C , for germination, which occurs in 7 to 21 days. Harden off seedlings to 18–19°C before transplanting into full sun (level 3). Water moderately (level 2). Space plants 30–45 cm apart and rows 45–60 cm apart. Thin-walled peppers benefit from good air circulation to prevent excessive moisture.
Harvesting and preservation
Harvest the first fruits quickly to encourage continuous production . The fruits can be picked green for a sweet and crisp taste, or red for a richer, slightly warmer flavor. Store them at 10-12°C and 95% relative humidity to preserve their freshness.
