Rosemary is an iconic aromatic herb with stiff stems and thin, leathery leaves reminiscent of small pine needles. Its fragrance is warm, resinous, camphoraceous, and powerful, perfect for accompanying grilled meats, roasted vegetables, marinades, breads, and stews. As it dries, its leaves concentrate their essential oils even further, releasing a stronger aroma than when fresh.
A perennial in mild climates but grown as an annual in colder regions, rosemary thrives in full sun and dry, mineral soil. It can become a small shrub over time if brought indoors for the winter in northern areas.

Farming method

Rosemary germinates slowly and with difficulty. Stratify the seeds for 2 to 6 weeks , then sow them 8 to 10 weeks before the last frost . Sow 3 mm (1/8") deep in a light, well-draining potting mix. Maintain a warm temperature ( 27 to 32°C , optimal around 30°C ).
Water from the bottom to avoid excess moisture.
Transplant outdoors after all risk of frost has passed, into dry, warm soil in full sun. Space plants 45 to 60 cm apart and rows 60 to 90 cm apart.

In cold zones (such as 5a), bring rosemary indoors for the winter in a larger, brighter pot.


Harvesting and preservation

Harvest whole stems as needed. To dry, hang them upside down in a dry, well-ventilated, and dark place.
Once dry, detach the leaves and store them in airtight containers : they will retain their aroma for many months.
