Organic 'Copper River' tomato (Solanum lycopersicum) from the seed company Gaia, a bicolored copper-amber and bright pink, elegant, juicy and extraordinarily attractive

The 'Copper River' tomato, developed by Lynn Brown of Napa Valley , is a modern heirloom variety with sumptuous colors and generous yields. Indeterminate but with a compact, semi-determinate growth habit, it produces successive waves of thin-skinned, copper-colored fruit in mid-season, which lighten as it ripens to reveal a subtle pale yellow and a vibrant , bright pink interior . This spectacular visual combination makes it an exceptional tomato for artistic platters, farmers' markets, and horticultural rarities.

Its sweet, juicy, and slightly fruity flavor perfectly complements its tender texture and attractive appearance. 'Copper River' thus combines elegance, originality, and high yield, all in a compact plant that is easy to manage in the garden.

Farming method

Sow indoors 6 to 8 weeks before planting out . Place the seeds 3–6 mm (1/8–1/4") deep in a light potting mix. Maintain a temperature of 23–29 °C (73–84 °F ) for germination in 5 to 10 days . During the hardening-off period, reduce watering and nitrogen application to encourage strong seedlings.

Transplant after the last frost. Space plants 60 to 90 cm (24–36") apart, with 120 to 180 cm (4–6') between rows. Plant in full sun , with regular watering (level 3) , and sturdy staking , necessary to support the heavy fruit clusters.

Harvesting and preservation

Harvest when the copper color changes to a light yellow and pinkish highlights appear inside. To speed up production, pick the fruit when it has reached its first color , then let it ripen off the vine at 22°C or above . Store at 12–21°C , below 95% relative humidity , to preserve its juiciness.

Usage ideas

• Magnificent when sliced , where the copper-pink contrast is fully revealed
• Delicious in fresh salads , sweet and aromatic
• Ideal for gourmet plating , thanks to its color palette
• Excellent in roasted, mild or lightly caramelized dishes
