Indian mung bean, certified organic seeds (Vigna radiata) This warm-season annual legume produces the small green beans characteristic of mung. Its fast growth suits sunny vegetable gardens where summer provides sufficient heat. Fully cooked dry beans are used in dals, soups, stews, warm salads, and rice dishes. Like other members of the Fabaceae family, plants can fix nitrogen through root nodules. Each Gaia packet contains approximately 50 seeds certified organic by Ecocert Canada, open pollinated, and identified as an heirloom. Kew accepts Vigna radiata as the botanical species for mung bean. Plants remain frost sensitive throughout the growing season.
Wait until frost danger has passed and soil has warmed to at least 16°C before direct sowing. Gaia’s technical table lists germination at 21 to 30°C, preferably around 25°C, in 5 to 10 days. Place seeds approximately 1 inch deep and 1 to 2 inches apart, with 6 to 12 inches between rows. Grow in full sun and loose well-drained loam or sandy loam. Avoid excessively fertile soil, which promotes foliage at the expense of pods. Maintain even moisture without standing water, especially during emergence and flowering. Thin crowded seedlings without disturbing the strongest plants.
Gaia lists full maturity at 70 to 100 days, with a typical period of 75 to 90 days in its description. Plants reach approximately 24 to 36 inches high and 12 to 18 inches wide. For a dry harvest, wait until pods become brown and brittle. Pull plants in dry weather, hang them upside down in a covered ventilated place, then thresh after they are completely dry. Sort the seed and discard stained or damaged beans. Store dried mung beans in an airtight container in a cool dry location. Always cook mung beans completely in fresh water before serving them in meals.
